Veggie loaded egg fried rice

Grrrrr my son is really testing me at the moment. At close to 3 years old he believes he can do everything himself.

I try to let him do it but when he can't it ends in tears.

Also when your trying to do a million things and in a rush it is hard to watch them take them ten minutes to seat himself at the big table (he says his small table is for babies)

At least I can shove as many veggies as I can into some fried rice which he loves.

Ingredients

Veggies:

1/2 onion finely chopped

1 tsp garlic

1 tsp crushed ginger

1 cup butternut cubes

4 baby carrots finely sliced

2 cups baby spinach

1 cup baby corn sliced into discs

Rice:

1 cup brown basmati rice cooked according to instructions

Other:

2 eggs, whisked

2 tbsp paprika

2 tbsp spy sauce

Oil for cooking

Sea salt and pepper

Preheat oven to 170. Toss butternut cubes in ome olive oil and sea salt. Roast until soft about 20 mins

Fry onion in a wok or pan with garlic and ginger and paprika.

Add the rest of your veg except butternut.

Fry until everything is cooked.

Add rice and stir everything. Move to one side of the pan and add your whisked eggs into the other side. Let them cook and then stir everything together.

Add soy sauce and taste - does it need more?

Add cooked butternut and stir all together one last time.

Delicious for everyone - I normally have some chopped chilli in oil for dad and I to add to our plates for an adultified version:)
