Roasted broccoli and brown butter pasta

This got me 5 yum yum's from my toddler. In my opinion that is a total kitchen win! There is something about roasting broccoli - it takes it from quite a bland veggie to something rather special.

1 head of broccoli, florets removed

4 cloves of garlic 

1/2  lemon

8 tbsp butter

1 cup cherry tomatoes

3 zucchinis


Fresh basil - 1 handful leaves torn


Put your broccoli, tomatoes, garlic cloves (keep the peel on) and your zucchini on an oven tray. Drizzle with olive oil and sea salt. Put in hot oven and roast for 15 minutes until broccoli has a bit of caramelisation. 

Boil your spaghetti on to boil according to packet. Reserve some cooking liquid (1/4 cup)

In a frying pan, melt your butter and let it get nut brown. As soon as that happens - squeeze in your lemon juice from the half a lemon. 

Add your broccoli and tomatoes, and squeeze in your garlic out the cloves. Add the basil. Add your cooking liquid and some parmesan. Stir and serve!
