Raw date & chia bites

I am constantly on the hunt for healthy snacks not just for my little boy but for myself too. Is it just me or does a cup of tea NEED a biscuit or treat with it??


These take 5 minutes to whip up and are raw so no cooking needed!

Ingredients:


1 cup dates - preferably medjool or similar - the fresher and plumper the easier it will be for your processor to handle. If you buy the very dry dates - soak in hot water for 15 minutes then strain.

1/2 cup almond slivers/flakes

1/2 cup dried cranberries or raisins

2 tbsp chia seeds

2 tbsp melted coconut oil

1/4 cup desiccated coconut for rolling


As mentioned above - if you buy the packs of very dried out dates, soak them in hot water for 15 minutes first, then strain. They will be easier to work with. This isn't necessary if you buy good quality medjool dates.


Put everything except for the desiccated coconut into your processor. Blitz until chopped and combined - the texture will still be lumpy but as long as you don't have big chunks of dates you good to go.


Roll mixture into balls (size is totally dependent on you).

Place your desiccated coconut onto a plate or board and roll your balls in it to coat.

Put in the fridge to set for at least an hour.

Keeps in the fridge for up to 10 days!
