Keto Cloud Bread

I have done my fair share of low carb diets - on and off. I always feel great when I am on them but somehow always manage to fall off the wagon:(

A lot of stress lately has meant my eating habits have gone out the window big time. So this is me trying to be healthy again.


I am NOT a fan of low carb bread - the one with the funky texture and weird coconut taste. I saw a recipe for cloud bread and I figured I would give it a go.


It is actually really tasty and the texture is airy and more like a mini omelette.


I made mine with Jalapeno cream cheese for extra flavour.


Ingredients:


3 eggs, separated carefully (yolks in one bowl, whites in another)

4 TBSP cream cheese of choice

1/2 tsp cream of tartar

1/2 tsp sea salt


Start by mixing your egg yolks with the cream cheese. You can just use a fork for this.

Then, add your cream of tartar and salt to your egg whites and beat until stiff peaks. *if you used your beater for the yolks and any yolk is left on them they will not go stiff.


Slowly incorporate your yolk mixture with the stiff white peaks, try not to over-mix and let all the air out.


Place on a baking sheet in little mounds - about the width of a fried egg and an inch high.

Bake on 160 until the tops are golden - about 10-15 minutes.

Let them cool COMPLETELY as they will set like this.


Use as a bread substitute!
