Hidden Veggie Tuna Pasta

Adam is going through one of his fussy eater phases. I really struggle when he is like this and doesn't want to to eat - being a feeder means I feel panicked when he isn't getting fed!

It isn't just that he is being fussy with food. He wont let us help him eat yet he wants to use cutlery and sit at the big table. So then he ends up throwing a massive tantrum because we try to help him when he is struggling!

This parenting thing is really hard some days.


Ingredients:

1 x carrot finely diced 2 x sticks celery finely diced 2 cups spinach, finely chopped 1/2 onion finely diced 3 x tomatoes diced 2 x tbsp tomato paste 2 cloves garlic, crushed 1 x tin tuna drained

1 tbsp greek yoghurt 250g Rigatoni pasta cooked as per packet instructions

Fry onion, carrot and celery with garlic. Add tomatoes and tomato paste. Cook until soft about ten mins. Add spinach. Cook for another minute. Blitz in processor until smooth (and the veggies are hidden) and put back in pan on heat. Add tuna and greek yoghurt for creaminess. Stir through. Add cooked pasta. Delicious with basil and parmesan/cheddar. For the grown ups add crushed chilli onto their plates when serving.
