Banana pancakes

Do you like your pancakes thin or thick? I love the thick variety and these were amazing. They were fluffy and moist on the inside.


2 cups buttermilk (make your own by adding 2tsp lemon juice into 2 cups milk and let stand for ten mins) 2 ripe bananas, mashed

2 eggs 3 tbsp melted butter or coco oil 2 tsp vanilla 2,5 cups flour 1 tbsp baking powder 1/2 tsp baking soda

1/4 cup brown sugar 1/2 tsp salt 2 tbsp chia seeds #optional

Mix buttermilk, bananas, melted butter, eggs, vanilla in a bowl. Mix sugar, flour, chia seeds, baking powder, baking soda, salt in another. Add dry to wet until just combined, do not over mix. Heat some butter or coco oil in pan and drop small ladleful in, it will spread.

When bubbles start to show turn over and cook until golden.

Serve with coconut cream or yoghurt, nuts and more banana.
