Lemon & Garlic Chicken

This sauce was so good I nearly licked my plate. Nearly….

 

4 x chicken breasts, sliced in half

paprika, to dust over chicken

1/2 white onion, finely diced

2 rashers bacon, diced

2 x cloves crushed garlic

250g white mushrooms, sliced in half

1 glass white wine

1 cube chicken stock

1/2 cup cream

1/2 cu grated parmasan

handful finely chopped parsley

juice and zest of 1 lemon

salt & pepper

olive oil

butter

 

Season the chicken with s&p and paprika.

Heat up some oil in a pan, and brown your chicken on all sides. Set aside. (i forgot to slice mine in half upfront so had to do it after i cooked them which isn’t ideal as they are hot)

In the same pan, add a knob of butter and your bacon and onions. Saute until onion goes translucent.

Add your mushrooms and another knob of butter. Cook down for 2 minutes, then add the white wine and chicken stock cube. Simmer for 5 minutes.

Add the chicken back to the pan, the cream and lemon, and simmer for another 5 minutes. Scatter with parmasan and parsley and serve!

Goes well with wild brown rice.
