Fish on the braai/bbq is a delicious thing – you get a great smoky flavor.
You could use any fish for this, we used silverfish which is similar to snapper.
I chose smallish ones so that we could each have our own fish.
1 x small fish per person (unless you doing 1 big fish but that can be tricky to handle)
4 x garlic cloves
3 red chillies
1/2 cup fresh fennel
1/2 cup fresh dill
juice of 2 lemons
zest of 1 lemon
salt and pepper to taste
Start by making slits in your fish on both sides. This helps it cook quicker and more evenly, and also allows you to impart flavour inside those pockets.
Put the marinade ingredients in a blender and pulse until a coarse paste.
Rub the marinade all over the fish and into the slits. Marinade for at least an hour
On medium coals, place your fish on the grid. Cook for 5 minutes per side – do not try turn it too often it is delicate.
