Home-made Chilli Jam


This goes with Brie, Camembert and Blue cheese so well. It really compliments the rich cheese. I decided to make a few jars as presents too.

It’s really easy and better then shop bought

8-10 red chillies – use yr discretion here about which chillies to use. I used some thai and jalapeno’s

2 red/yellow peppers

2 garlic cloves

2 tsp crushed ginger

1/2 cup fresh coriander

1 cup brown sugar

2 tbsp fish sauce

1.5 cups brown vinegar


Blitz the first 6 ingredients together in a processor until smooth

Put in a pot on the stove on medium heat. Add the sugar, vinegar and fish sauce and simmer for 1 hour or until thick and jam like. Spoon into jars while still hot and close them tightly. Keeps for up to a month in cupboard.
