I have a confession…..I am a bit of a snob when it comes to scones. They must be:
- Fresh and warm from the oven
- Crumbly, not tough
- Have NO baking powder taste in sight
- Have good quality strawberry jam to serve with, and fresh cream
- Served with a cup of tea
The thing is, scones are so incredibly easy to make yourself, that there is no reason you shouldn’t achieve all of the above. Most of the ingredients are in your cupboard already, and it takes 20 minutes from prep to on your plate!
- 2 1/2 cups cake flour
- 2 Tsp Baking Powder
- pinch salt
- 4 Tbs cold butter
- 1/4 cup castor sugar
- 3/4 cup milk
In the bowl of your processor, place your flour, baking powder and salt. Add your butter and blitz quickly until it resembles breadcrumbs, don’t over do it. You can also do it by hand by cutting the butter into the flour mix manually.
Remove from processor and place in a bowl, and make a well in the centre. Add your milk and sugar, and slowly bring it all together.
Turn it out onto a flour surface and just bring it together enough to make a rough dough, DO NOT OVERWORK – thats where tough scones come from.
Use your hands to shape it into a thick 1cm circle. Using a round cutter, cut circles out and place on a greased baking sheet. Make it so they are just touching – not on top of each other jusssst touching ever so slightly.
Bake in oven for 10-15 mins until golden on top.
Serve with strawberry jam and thick cream!
