Blueberry & Banana Flapjacks

I’m sure I have mentioned before that I love brunch on the weekend, it’s one of my favourite pleasures in life. Sam made these for me and even though it took him the whole morning, it was well worth it.

Flapjacks mean different things to different people in other countries. In SA this is a flapjack, basically a thick, small pancake. But in USA this is a pancake. I guess what we call a pancake would be called a crepe somewhere else.

  • 1 and ½ cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 and ¼ cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 tsp cinnamon
  • 1/2 teaspoon vanilla seeds or essence
  • 2 peeled bananas, chopped
  • 1/2 cup fresh blueberries

Mix all ingredients in a big bowl. Heat some butter on a low-medium heat, and add a big spoonful of the thick mixture and let it make a round in the pan. When bubbles appear, turn over and cook the other side. Serve with maple syrup and butter, and some fresh fruit if you like! (bacon would be good too)
