Beef Kofta’s with fresh chopped salsa

Hey! For those of you who noticed..it has been a while. I am still getting back into the groove of things – to be honest cooking hasn’t been a high priority and my benchmark went from “yummy” to “edible” for a while!

Then something happened in the last week – I started to feel like cooking again – proper, fresh ingredients, planning a recipe cooking!!!

So even though the stuff I am making is still pretty boring – it’s a start:)

We have been watching My Kitchen rules and a few contestants have made these. It made me realise I have never tried kofta – of any type! How bizarre.

You would normally make these with lamb mince but I had beef mince on hand and they were really nice – fresh and spicy and zesty.

For the Kofta’s:

500g beef steak mince

1/2 onion, finely grated

1 tsp ground cumin

1 tsp ground coriander

1 tsp coriander seeds

1 tsp cinnamon

1 tsp paprika

1 tsp all spice

1/2 cup FINELY chopped coriander (stalks and all)

1 tsp milk

Bamboo sticks, soaked in water for 15 minutes (stops them burning)

 

For the Salsa:

1 large tomato, finely diced

1 red chilli, finely chopped

1 avocado, diced

handful fresh coriander, finely chopped

juice of half a lemon

salt & pepper

 

Pita’s and Tzatziki to serve

 

Start by heating some oil in a frying pan, and adding your grated onion for the Kofta’s. Add ALL your spices, and lightly fry for 5 minutes with the onion.

In a big bowl, place your mince, milk and coriander. Add the onion and spices from the pan. Mix by hand until all well combined.

Put the mixture in the fridge for 15 minutes or longer so it can firm up slightly.

Grab some mince and roll into a ball. Put a stick through the ball and then smooth the mince down the stick (see pics for what they look like)

Carry on until all mixture has been used. Put your kofta skewers in the fridge until you need to cook them.

Heat oven to 180. When you ready to cook them, heat some cooking oil. Brown on all sides, and finish in the oven for 7 minutes or until cooked through.

For the salsa, put all ingredients together in a bowl.

Serve with the toasted pita’s and Tzatziki!!
